Simmer clear chicken broth, add enoki and a handful of king prawns. Blanch rice vermicelli, add choi sum for 30–60 seconds, and ladle over.

Tofu, shiitake & soy stir-fry noodles

Sear cubes of classic tofu, add sliced shiitake, then choi sum and stir-fry noodles. Finish with a splash of soy sauce.

Blanched greens with sesame–soy dressing

Blanch choi sum 45–60 seconds, drain well, then dress with a mix of rice vinegar, a pinch of sugar, light soy, and a few drops of sesame oil.
